With over 400 competitors and 800 matches played over 7 busy days, the ELO Tennis Tournament is one of the largest Open Tennis Tournaments in Scotland.

We'll be serving food everyday all week from The North Berwick Tennis Club Cafe, as well as offering some tasty menus from J's Tiny Deli outside throughout the week. Outdoor and indoor seating available.

Be sure to come along and support some amazing amateur players 🎾, and enjoy a cold one from the club's bar 🍻.

Here’s how we prep our Beef;

- We toast a selection of aromats: cumin seeds, coriander seeds, cinnamon sticks, peppercorn, star anise, mustards seeds and bay leaves.
- After our seeds have been toasted for a few minutes at 180 degrees, we add them to boiling water with lots of salt and some sugar, creating our brine mix.
- Once the brine mix has cooled, our beef brisket is added. Always make sure your beef is weighed down with something so it stays submerged, we use plates.
- The beef continues to brine for 7 DAYS, leave it at the back of your fridge and forget about it, the longer the better.
- Rinse off any seeds on the Brisket and place it into a pan of cold water.
- Drain, and place the beef in a deep gastro, make sure the fattiest side is on top.
- Seal your gastro, slow cook your beef for 10 hours at 130 degrees.

You are left if tender, spiced, salted beef that falls apart in your mouth. It’s delicious all on its own, but even better with some Caponata. We like to serve it with some cheddar in a toasted ciabatta.

We shred them, then use some delicious ingredients from @tubbytoms range of sauces and rubs.
